Chef Charles (Chuck) Gillis
Executive Chef, Loews Chicago O’Hare Hotel and The Ashburn
Chef Charles (Chuck) Gillis brings over 32 years of culinary experience to his role as Executive Chef for Loews Chicago O’Hare Hotel. He oversees banquets for meetings and events for the 556 luxury guest room hotel as well as the onsite food and beverage outlet, The Ashburn. In his current role, he leads the conceptualization, planning, and execution of the hotel and restaurant.
Chef Chuck’s career consists of experience working with top hotels and restaurants. Prior to joining Loews Hotels, Chef Chuck was the Executive Sous Chef at the Fairmont Orchard in Hawaii and before that he worked in the kitchens of Ritz Carlton, Four Seasons, and Solider Field.
Originally from Texas, he became captivated by the culinary arts while helping his grandmother in the kitchen on their family farm. There he learned to prepare meals for his large extended family and went on to become the Chef for Stags Leap Restaurant in Fredericksburg, TX.
Chef Chuck gained his formal training from El Centro College in Dallas, Texas, and completed an apprenticeship with the American Culinary Federation. When he’s not in the kitchen, he likes to travel and camp/hike with his son.
